Miso is essentially fermented soybeans. Soybeans are fermented with a yeast fungus known as “koji” and the vitamin B12 for a range of a few days up to years (depending on what kind of miso is being made). Salt is added and the whole mixture is ground into a paste that resembles a nut-butter consistency, and the end result is miso.
