Label Logic: Calories, Fat, and Serving Size

The most common thing consumers look for when they pick up a product and look at the nutrition label is the calories and total fat, both of which are typically bold on the nutrition label. So you may very quickly see 110 calories and 2 grams of fat and think, “Oh, this is a great snack!” What most consumers forget to look at after the calories and fat is the serving size.

GMOs are essentially created when plants or animals are modified through gene-splicing technology associated with biochemistry (also called genetic engineering). DNA from different organisms is merged to form a new, often unstable organism that would normally not occur in nature or through crossbreeding.

Cellulose gum is generally used in food as a thickening, emulsifying, and stabilizing agent. Due to its high viscosity, or thickness, cellulose gum is also found in products like toothpaste, laundry detergent (it works as a suspension liquid to remove stains from natural fabrics), water-based paints, diet pills, and laxatives. It can also be found as a lubricating element in eye drops (artificial tears).

With the growing awareness of the dangers of trans fats, many food manufacturers are removing them from their products and replacing them with different fats in order to maintain the same taste and texture of their tried and true product. Many food manufacturers are switching to palm oil and palm kernel oil, both of which are extracted from the seeds and the pulp of the fruit of the palm oil, a plant native to Africa, and also widely used in parts of Asia.
